Lemon Leong Fun Sui/ Lemon Grass Jelly Water

As simple as cooking a maggie mee, this delightfully refreshing drink is easy to prepare and is most suitable especially during hot days like these.

Lemon Leong Fun Sui (Lemon Grass Jelly Water)

1 packet of leong fun/ cincau (grass jelly)
1 lemon (thinly sliced)
2 cups sugar
1 1/2 cups water
2 pandan leaves (knotted)

1. Prepare the grass jelly in your preferred shapes, either in cubes or diagonal. Keep refrigerated.

2. In a pot, boil water with pandan leaves. Then slowly pour in the sugar. Stir till sugar dissolved completely. Let the sugar syrup cool. Keep refrigerated in a container.

3. Whenever you wanted to drink, just scoop a few spoonful of grass jelly, approx. 5 tbsp sugar syrup, add in a slice of lemon and some water.

Note: Tasted like honey lemon.
