Almond Biscotti

This is the picture of my first homemade biscotti. I've used almond flakes in this recipe. Biscotti is Italian for 'biscuit' or 'cookies'. 'Bis' means twice and 'cotti' means baked. Biscotti refers to any cookies or biscuits which are baked twice. And since biscotti are crisp and crunchy, it can easily stand up to a dunking in our coffee or wine. senyum

The biscotti that i've made is a traditional biscotti, as it does not contain butter or oil, and uses eggs to bind the ingredients together.

Ingredients:
90g soft flour/ cake flour
3 egg whites
80g castor sugar
90g chopped nuts of your choice

1. Preheat oven to 140ºC. Whisk egg whites and sugar until it forms stiff peaks. Fold in flour and nuts and pour batter into a lined 8" loaf tin. Bake for 55mins.

2. Remove from the tin to cool. Slice according to desired thickness and return to the oven to bake until crispy, about 20mins.

Tips: The thickness of your biscotti controls the texture of it. The thinner it is, the crispier it will be.

Chirstmas Cookie Recipes

...Christmas is about
sharing & giving...
I absolutely love Christmas! Not just because of the real meaning behind this meaningful day, but it's also because of the warm & joy that this season brings. To me, Christmas is about sharing & giving.

Every year, M's family would have an open house at their home. We would wake up early in the morning to prepare for this occasion. The ladies would be helping in the kitchen while the gentlemen would be doing the arrangement of tables & chairs. The atmosphere is so warmth and joyous. You will see us all making jokes and giggling or even laughing out loud as we do our own chores.

This year, I have something else up in my sleeve. I am planning to bake some christmas cookies. Some says that baking christmas cookies brings families and friends together with the warm goodness of cookies fresh from the oven. I totally agreed with this statement. That is why I am going to start baking christmas cookies from this year onwards. Before that, please excuse me while I search for christmas cookie recipes. :)

Happy Monday! :)

Upside Down Pineapple Tart

Weekend Snapshot

Taa Daa!! Miss Y presents to you Marzie's most talk about "Upside Down Pineapple Tart". This is the tart that she has been talking about and been craving for. It does look yummy~licious, doesn't it? Hot piping tart fresh from the oven, topped with a scoop of smooth vanilla ice-cream...mmm.... heavenly! :)

Marzie!!! I've made this tart esspecially for you to cheer you up! Dont't be bother by the TC widget thingy, k! :) Much Love & Hugs!! :))

Ingredients:
50g butter (softened)
40g caster (superfine) sugar
1 egg
115g all-purpose flour
pinch of salt

For the pineapple layer
3 Tbsp butter, softened
35g brown sugar
1 can pineapple

To make the pastry, beat together the butter and sugar until pale & creamy. Beat in egg, then sift in the flour and salt to mix to a soft dough. Knead, wrap in cling film and chill for an hour.

Tips: No machine required for making the pastry. A medium size mixing bowl and a spatula is adequate.

For the pineapple layer, grease a 4in cake tin. Melt butter in a pan and add 2 Tbsp into the cake tin. Sprinkle with 25g brown sugar. Arrange pineapple slices on top, sprinkle with the remaining brown sugar and butter.

Preheat oven to 230°C. Place the cake tin in the oven for about 5-10 mins, until a light golden caramel forms on the base.

Roll out the pastry on a lightly floured surface to around the same size as the tin. Lay it op top of the pineapples and tuck the edges down around the sides.

Bake for about 15-20 mins until the pastry is golden. Remove from the oven and leave to stand for 5 minutes.

Place an upturned plate on top of the tin and, holding the two together with a dish towel, turn the pineapple tart out on to the plate. Serve whote still warm with a scoop of vanilla ice-cream.

Tea Chats: This is easier to make than what i think and it's yummy~licious especially while it is still warm. You can use this recipe for making apple tart, just replace the pineapple with apples.

So, peeps, did you enjoy the tart? Hope you guys did!
Happy Monday & Happy WS! :)
