This dish is similar to the Hot Plate Yee Meen you can normally get at hawker stall or food court. One of my favorite hawker food! yummy~licious! :)
Ingredients:
2 cloves garlic (lightly crushed)
3cm ginger (sliced)
6 dried chilli (soaked)
2 yee meen
6 shiitake mushrooms (soaked)
300g chicken
3 cups water
Oyster sauce
Soy Sauce
Some starch/corn flour
Cut the stem off from shiitake mushroom. Press all the water out from the mushroom. Discard water. Sprinkle some starch/corn flour on the mushroom. Leave aside for 15mins.
Tips: Add 1 tsp of oil into water when soaking the dried mushroom. This will helps to soften the mushroom more quickly.

Cut chicken into pieces, cleaned and marinate with 2 tbsp oyster sauce and 2 tbsp soy sauce for about 20mins.
Saute garlic & ginger until fragrant. Add in dried chilli, follow by chicken. Stir-fry till chicken is almost cook, add mushroom and continue stir-frying for another 30secs. Then add in water, 3 tbsp oyster sauce and 3 tbsp soy sauce. Let it simmer under low heat for 2 hours.
To thicken the sauce, mix 1 tbsp starch flour with 2 tbsp water. Add mixture slowly into the sauce whilst stirring. Repeat thickening if needed.
Tips: You can add in as much water as you prefer, so as long as you maintain a ratio 1:1:1 for water:oyster sauce:soy sauce
Meanwhile, cook yee meen in a boiling water for 45-60 secs. Drain with colander and drizzle with some oil. Mixed well so that the yee meen is well coated.
Heat a pan with 1tsp of oil. Put the yee meen facing flat on the pan. Leave it untouch for 30-45secs, then turn to the other side and repeat the same. Serve yee meen on a deep plate. Pour sauce over it.
Tea Chats: This is a spicy dish, if you prefer a milder taste, put 2 dried chilli instead of 6. I love spicy food, that's why i put 6. :)
