Fried Chicken With Curry Leaves




Ingredients:
6 chicken drumsticks
1 Tbsp curry powder
1/2 tsp five spices powder
1 onion (sliced)
2 sprig curry leaves
1 tsp salt
Flour for coating

Marinate chicken with curry powder, five spices powder, onion, curry leaves & salt for about 2 hours.

Coat chicken with flour before deep frying it till slightly yellow. Scoop it out & drain for oil. Place chicken standing vertical on the side of a deep bowl with the heavy part on the bottom. Leave for 1-2 mins. This is to allow the blood to oozes out while resting.

Deep fry chickens for the 2nd time till golden brown. Coat the remaining onions and curry leaves with flour and deep fry. Drain for oil before serving.

Tips: Deep fry twice to ensure chicken is thoroughly cooked and to have a crispy skin.
