Potato Puff

Aloha, peeps!

Today, I made a very easy snack as per marzie's request. She has tried this once at Trader's Hotel during her birthday celebration and said it was superb-yummy~licious. Being a passionate cook as I am, as well as a good friend, I challenged myself to make this potato puff. It turned out to be edible (phew!), and according to my darling, "yum.." It was crispy on the outside, and soft in the inside.

4 medium sized potatoes (peeled)
2 Tbsp butter
1 egg
1/2 cup plain flour
1 Tbsp mayonaise
1 Tbsp chilli powder
1/2 shallot (chopped)
Salt & Pepper to taste
Bread Crumbs

1. Boiled potatoes until soft in a pot of salt water. Mash potatoes and add in butter, egg, flour, mayonaise, chilli powder and shallots. Add pepper & salt to taste.

2. Heat enough oil in a pan for deep frying. Spoon out a spoonful of potatoes mixture into bed of bread crumbs and roll it over to coat completely. Deep fry.

See! It's easy, right! :)
